I definitely could have done much better in the sear. Controlling the fire from the sizzling fat is not easy for me

    There is a ton of fat on that you should trim. That will help with flare ups.

    The sear is bad. Overall 2/5

    With the ceramic egg style of grill I usually remove the deflector so I have direct heat. It looks like your deflector is still in there.

    I start up the grill. Open all vents fully. When temp gets about 350 keep all vents full open. I’ll throw it on. Close lid. 1-2 minutes a side. Then I’ll close the vents most of the way. Additional 2 minutes per side. At that point you let it cook at the lower temps until you get the temp doneness you want. Let rest before serving.

    First, that steak must have tasted awesome. Could it be better, yes.

    Either your grill as not hot enough to give a good sear, and or your meat was too wet. Salt your steak at least 4 hours before you put it on the grill and leave it in the fridge, then let it come to room temp before putting it on the grill. You can brine it for 24 hours if you want. Pat dry the steak before you put in on the grill. If your grill is nice and hot and the steak is dry on the outside you will get a good sear.

    The most important part is buying a quality cut of meat. 4A well done steak still tastes better than a crap steak cooked to perfection. You can’t make a crap grade steak tender no matter what you do.
