I don’t personally tend to prefer the more “artistic” style of maki and more often err on the side of nigiri, but even I have to admit that those rolls look delicious!

I think it looks messy with sauce, too many toppings and too much going on. I think the natural flavor of fish on rice is just lost. Id likely just feel textures covered in dipping sauce.
That being said I prefer simple, clean rolls.
The rolls themselves look tight and holding their own structure so the technique is solid.
But to each their own. This reminds me of the Ron Swanson burger challenge. I’m sure it was tasty, and I wouldn’t turn it away.

My interest in this type of sushi varies greatly depending on how stoned I am at the time. It’s junk food, but pretty luxurious junk food that is tasty. It’s super fun to make too all the sauces and garnishes give you a lot more artistic liberty.
