No strong smell and firm texture. I cooked 3 pieces to test, taste is a lot different but doesn't seem bad. I don't have experience with dry aged, never ate it.

If it was only for me I would probably eat it but I was planning on serving it to a date with pasta.

  2. I forgot about 1 the same way except for 2 days. Certainly did not taste as good and texture was way worse so I expect 4 days to be quite bad.

    If it doesn’t smell then it’s fine. You’ve basically cured it.
    I dry brine my steaks for 24hrs at the most.

    If your nose doesn’t smell something off it should be fine. Don’t expect a juicy bite of steak though, it’ll be chewy haha

    Dry aging does not involve salting, that’s a completely different thing. You basically cured this meat. It’s probably safe, but I’d only be guessing if it’s tasty to eat.

    It’l be safe, but tough, proably best chopped up small and put in a slow cooker/stew or something.

    If it’s for a date, I’d buy a new steak, and just eat that one on my own time, in shame.

    Your dog loves jerky treats. If no dog, keep drying and curing, you might like jerky treats.

    I agree with everyone here as I am no pro. With that said, I left one salted in the fridge for 3 days out of laziness. I let it come up to temp and straight into a hot pan. For me at least, that was one tasty steak

    It’s an extended dry brine at this point. It may have more pop to it at 4 days but should still be edible.

    I usually leave mine on the wire rack for a day or 2 before I pull them out its the inly way I eat them anymore.

    Smoke it. Won’t take long because it is a steak and when I do corned beef in the smoker it comes out awesome.

    Jerky time. Slice it up. Toss it in the air fryer, set on dehumidify and in 6 hours, enjoy.

    Cube it, velvet it, then shallow fry it. Then add veggies in the same pan and deglaze with some Asian sauce combo. Got yourself the best stir fry ever.
