This is my favourite time of year! And I love playing with all sorts of squash, but my favourite is probably delicata because the skin is edible so I create little stuffed boats that I can pick up and eat. You can do this with honeyboat squash too.

I didn't follow a recipe but I scooped out the cooked squash, mixed in a bowl with rehydrated tvp, egg white, broccoli/kale (from frozen), walnuts, shredded cheddar (I usually use feta and it's better for this imo), nutritional yeast, and poultry seasoning. Topped with pumpkin seeds and pecans and baked for another 20 minutes or so.

    Delicata squash are my favorite. I look forward to this time of year and I eat at LEAST a dozen of them. I usually just roast them and eat and entire half, but this looks delicious. I have five or six sitting on my countertop ripening so maybe I’ll stuff them (I wait until they are butter yellow if they’re still white with green stripes in the store).

    Oh I forgot, I also put leftover wild rice blend in the squash!

    Looks delicious! I do something similar with lentils instead of tvp and farro instead of rice. So versatile.
