I'm smoking sobre pulled pork. I'd like to cook it at 225 but my KJ has settled at 240. Should keep chasing that 225 or am I overthinking this?

If it’s a Jr. go with it. Classic or Big Joe, you can finesse 225 pretty quickly.

Don’t overthink it. 240 225 is basically the same. I personally think 225 is too low for lump in my joe classic. I try and dial in around 250 for low and slow.

Why is your meat 42°? You need to let that sit a little out of the fridge before flopping the meat on the smoker… Or grill.
