The Coffee Cart Company, a family-run business founded in the county in 1999, is set to take over No.8 on Broad Street.
The premises were previously home to Italian restaurant Cotto, which closed its doors at the beginning of January.
A statement published by the restaurant at the time confirmed they had ceased trading at the premises, but said festival works and catering events would continue.
The Coffee Cart Company already has three locations across Hereford, along with a cafe in the tourist hotspot of Symonds Yat Rock.

An announcement on the company’s website said the team were pouring over two decades of experience into “creating something truly special”.
“Every detail, from the atmosphere to the perfect brew, is being carefully crafted to offer you more than just your average coffee experience.
“We’re taking our time to get everything just right, and we promise it’ll be worth the wait. While we work behind the scenes, we’ll keep you updated on our progress right here, so stay tuned!”
The business was founded by James Gardener and his wife, Sarah, in 1999, and had dreams of offering customers “something unique” that no one else in the city could provide.
Along with their permanent locations, the business also specialises in mobile catering for events, including weddings, “high-profile” corporate gatherings, and festivals.
