Here are some nice meals I’ve had the past couple of days where I’ve repurposed some leftovers.

Swordfish, caponata and bulgur wheat salad. Swordfish is one of my favorite things ever so I really enjoyed this! The bulgur wheat salad is bulgur, lemon zest, lemon juice, olive oil, salt & pep, dill, parsley, mint. Leftover caponata, feta and seedy sourdough. Looooooved this as an easy lunch. An extra bit of olive oil for the bread would have been nice but there’s a lot in the caponata and I’m also trying to lose weight so can’t go too overboard! The caponata was even nicer the next day.

Shawarma style chicken breast, leftover bulgur salad and some tomatoes. My husband took this photo so it’s much better framed! I’m going to have this for lunch tomorrow too. I used the following recipe from Reddit for the Shawarma but used chicken breast instead of thigh, cut them in half horizontally, and used the broiler/grill setting on my air fryer: https://www.reddit.com/r/Cooking/s/stQ5UhWevb
