

Trying flavored loaves now and I'm so excited of the possibilities!
This ones an ube loaf. I used my plain loaf recipe (which is basically baker's percentage based), but replaced some of the water with creamy flavours.
The COLOUR, texture and overall flavor was good, however the actual essence of ube was very mild. It gave me essence of eating a bland ube Stick-o! Maybe worth adding a little sugar or even ube halaya jam in the dough next time to help enhance the flavor.
Made 2 loaves:
900g all-purpose flour
100g wholemeal flour
440g water
200g whole milk
60g cream of coconut
20g ube extract
200g active starter
11g salt
Mixed flours, water, milk, coconut cream, and ube extract until shaggy. Autolysed for 1hr, then added in starter and salt until well combined.
Bulk fermented for a total of 8.5hrs at room temp (coil and fold every 30 mins for first 2hrs).
Halfed dough, preshaped and let it rest for 15 mins on the counter before final shaping. Refrigerated dough for 14hrs.
Scored only decorative pattern, then baked at 250°C covered lid and ice cubes for 30 mins. 7 mins in did main expansion score.
Then lid was removed and dry baked at 220°C for 25 mins. Cooled fully before slicing.

Such a beautiful loaf, amazing work! I would love to try this flavor as well. Whenever I’ve made flavored loaves, I always have to add much more flavor than you’d originally think because it always gets lost in the sourdough flavors. I think the ideas you have for bumping up the flavor next time are a great idea and I might try them out! 😁

I’ve found ube extract to be hit or miss as far as how much flavor it imparts, esp if you are adding 3x the coconut flavor. Maybe up the extract, but also I def think ube halaya swirled into this would help, or even grated ube if you’re able to get the real thing (maybe weee can help?)

You need some of this to put on top, this stuff is SO GOOD
The cross-section looked kind of alarming at first, the intense purple color reminding me of purple chewing gum we used to chew as kids, but it’s natural color, and the purple hue in the shot of the uncut loaf is beautiful. That’s a fun project. If I ever get to where I get loaves with a size and crumb as nice as yours, maybe I’ll give something like that a try (though if I’m going to try yams, I think I’ll go with something orange. :).

I love the color of your loaf! I tried this and added the jam and it didn’t add much flavor unfortunately. I think the “sour-ness” of the sourdough is just too much in competition with the sweet needed for a good ube flavor. But the color of the loaf was beautiful 😍

I want to do this but all I can find are extract recipes and they all use red 40 and other crap dyes 🙁 I know using regular ube powder would give a very light purple
