Authentic Basbousa (Semolina Cake)

Ingredients

For the cake:
• 2 cups coarse semolina
• ¾ cup granulated sugar
• 1 cup plain yogurt
• ½ cup unsalted butter, melted (or ghee for richer flavor)
• 1 tsp baking powder
• ½ cup shredded coconut (optional, but common in many versions)
• Whole blanched almonds (or halved) for garnish

For the syrup:
• 1 ½ cups granulated sugar
• 1 cup water
• 1 tsp lemon juice
• 1 tbsp orange blossom water

Instructions
1. Prepare the syrup
• In a saucepan, combine sugar and water. Bring to a boil.
• Add lemon juice, reduce heat, and simmer for 10 minutes until slightly thickened.
• Stir in rose water or orange blossom water if using. Set aside to cool.
2. Make the batter
• In a bowl, mix semolina, sugar, baking powder, and coconut (if using).
• Add yogurt and melted butter. Stir until well combined (batter will be thick).
3. Assemble
• Grease a 9×13 inch baking dish. Spread the batter evenly.
• Score into diamond or square shapes with a knife. Place an almond in the center of each piece.
4. Bake
• Bake at 350°F (175°C) for 30–35 minutes, or until golden brown on top.
5. Add syrup
• Remove from oven and immediately pour cooled syrup evenly over the hot cake.
• Let it soak for at least 1 hour before serving.
