Wow. This is my easy summer salad recipe that my family is obsessed with, but so easy to make. So, I love this recipe because it’s actually so easy to make with only a few simple ingredients, but it looks super fancy and everyone’s always so impressed when I make it. So, let me show you guys how I make it. So, first, we’re going to cut up a bunch of cherry tomatoes. And I like to cut them into halves just like this. And for the marinade, it’s real easy. We’re going to start off with some good quality olive oil, a teaspoon of garlic, and some salt and pepper. Honestly, you don’t even need to marinate these tomatoes, but I do find that if you let them sit, it does taste better. Next, we’re going to cut some strawberries. All right, so this is where it gets a little bit fancy. We’re going to get some pushcuto, and we’re going to crisp these up as a topping. So, I’m going to put the pushcuto in the air fryer, but you can also put it in the oven as well. Woah. All right, so the pushcido is done. So, now time to assemble. We’re going to put an arugula base. We’re going to layer on our marinated tomatoes. Next, we’re going to put in our strawberries, some mini bokini, put some of this crispy pushcuto on top, some fresh basil, and a generous amount of balsamic glaze. Wow, this is actually incredible. It’s sweet. It’s garlicky. It’s tangy. And the crispy pushcidut is a game changer.
