Though I don't eat solely Mediterranean, I do try to incorporate it into my diet more. I am unsure if sweet potatoes are Mediterranean but I did roast em in olive oil. I made these instead of pasta or bread to go with my chicken dinner.

I cut about 3 sweet potatoes in half, brushed them with olive oil, and seasoned them. I baked them at 400* F for 30 minutes, flipped them over, then baked them for another 15 minutes. I used a foil lined baking sheet.
There’s another flair tag here called “close enough.” That’s how I live my life. I eat for myself and my family, not for gatekeepers.
EDIT: I would also eat those without hesitation– they look delicious
Absolutely
Nah.,I don’t think so.
I can eat them on your behalf. 😉
J/k. I don’t know. They look fantastic
I looooove savory sweet potatoes. I don’t really get why you would load something that’s already sweet with marshmallows and sugar.
I like mine with salt and lots of pepper. It’s sooo gooood.
Why wouldn’t they be? Mediterranean diet encourages eating whole, minimally processed foods and low saturated fat. This looks like it fits the bill! 🙂
Sidenote: I’ve been craving sweet potatoes for days and now you’re gonna make me actually go get some
They look amazing !
Im so glad you all like my simple side, you’re all very encouraging and supportive 😊
Sweet potatoes are definitely a part of the Mediterranean diet. So are white potatoes and purple ones too. They are loaded with nutrients – especially if you eat the skin. Enjoy in moderation and with a balanced diet.
I say yes, but I treat them and other starchy vegetables in place of whole grains rather than other vegetables.
Okay these look so good, I need to make them 😋
I like them baked savory but also eat them baked plain with a squeeze of vanilla Sweet Drops for a dessert.
These look phenomenal 👌
Looks like something I’d eat a taverna with grilled chicken chicken and lemon.
Sure! It’s a beautiful, whole food — unprocessed and lightly dressed.
Have you tried Japanese sweet potatoes (red skin, whitish flesh). Also delicious – when fully cooked have notes of chestnut and pineapple.
I live in the Mediterranean, and its actually common to have pop up stalls selling roasted sweet potato and chestnuts at this time of year!
I love to cut up sweet potatoes and eat them with eggs fried in avocado or olive oil with avocado on top and a whole grain piece of bread I use salt and chop up a bit of garlic in it. 😋
I use sweet potato in recipes that call for beef—like burgers or tacos
My endocrinologist said sweet potatoes are fine on Mediterranean Plan in moderation. Better than white potatoes. Everything in moderation. Variety, plant heavy, healthier options, whole foods not processed. Plenty of protein to keep you full. Except for feta cheese. That’s non negotiable for me.
Nothing wrong with sweet potatoes. I personally would add red onion for flavor, and some feta cheese on that mother fucker wouldn’t hurt. 😀
