I've found ways to air fry and bake with brining and steaming and they're all lovely… But nothing beats deep fried.

I blast mine on 405F w/superconvection in my toaster oven for 12 minutes a side, flipping them halfway through. In this image, the 2 columns on the right were marinated in BBQ sauce before cooking and the left 2 columns were marinated in Franks Buffalo Wing sauce. The BBQ ones get a nicer char on them because of the sugar in the sauce but they all taste great and there is zero of the deep fry cleanup we all despise. Don’t like the mess it makes in the kitchen and it smells up the house so I have settled on this as my go-to. I agree, fried is best but I’ve got my crunchy air fried method dialed in;
Air fry or convection baked wings need to be dry brined overnight with corn starch and baking powder. Deep fry will always be the best but dealing with the oil is a lot more work than just dry brining overnight

i love fried, but smoked and then air fryer works pretty damn well too. the smoked flavor is great

For me I air fry for 12 minutes at 360. Then shake em up and move em around and another 12 minutes. Then I sauce them and put them back in for 5 minutes at 390.

I always baked mine with salt pepper garlic onion . Then I fry them and toss em in sauce. Just enough to crisp up

How much baking powder and cornstarch do you use? Enough cornstarch to coat everything and a pinch of baking powder?

Deep fried is the way to go. But, I had amazing results in the grill and in the oven. All you have to do is take them out of the package, pat completely dry, let them sit out for awhile to take the chill out of them, lightly coat with some avocado oil and cook them longer on a lower heat. Banging.
