


This was my fist semi-successful sourdough. I’m wondering what the texture of a fresh sourdough should be like. It’s hard to explain but this feels very spongey and moist. When I squish it, it bounces back and I can tell it’s very airy. When I touch it, it is very slightly sticky. Is that normal? Or should the inside be fluffy and dry?

Honestly looks pretty good overall.
Fresh homemade sourdough, especially higher hydration loaves, will be a bit moister and springy than your dried out shelf stable grocery loaves.
It should be pleasantly chewy. If it’s “gummy” and hard, then usually it’s underbaked or improperly proofed.
Looking at your image, that looks pretty successful! I don’t see at first glance any particular gummy spots. They’ll usually show up as thick glossy almost dried glue look.
It should be tender, chewy, and moist. Basically as you’ve described it.
If you want it drier you can always bake it a bit longer. But again expect it to be more moist. It can dry out over the next few days depending on how you store it and the gluten retrogrades.
The next step is figuring out why the crumb is uneven from side to side. My guess is shaping.
What’s cool about this post is, with one picture it’s clear you have enough skill to make the final texture be what ever you want!
I would say decide what you want it to be and figure out what to do to your recipe and methods that gives that to you.
Usually comes down to some combo of hydration, proof time, and bake time.

That is a lovely loaf! The crumb looks great. All my sourdough starts out a little more moist that store bread, but it’s so much better!! Nice job!
