    But can you eat the pumpkin as well. Those look like carving pumpkins not cooking pumpkins. Better to use some winter squash which is edible as well I would think.

    This is similar to the pineapple fried rice (Thai). They love to put their rice inside the pineapple and serve it like that.

    The problem with pumpkin version is that it is visually not appealing.

    as long as the pumpkin is cooked through, I don’t think this is that bad. I’d eat the fuck out of this. It’s like a vegetable bread bowl.

    Ingredients:

    ▢ 3 (6 inch) pumpkin pie pumpkins (or 1 regular medium-size pumpkin)
    ▢ 1 pound Italian sausage mild, or hot, casings removed
    ▢ 1 small yellow onion diced
    ▢ 1 cup red bell pepper , diced
    ▢ 1 large carrot , shredded
    ▢ 2 ribs celery , chopped
    ▢ 4 cloves garlic , minced
    ▢ 2 teaspoons fresh thyme , chopped, (or ¾ teaspoon dried thyme)
    ▢ 2 teaspoons fresh rosemary , chopped, (or ¾ teaspoon dried rosemary)
    ▢ 2 teaspoons fresh sage , chopped, (or ¾ teaspoon dried sage)
    ▢ 1 teaspoon kosher salt
    ▢ 1/2 teaspoon fresh cracked black pepper
    ▢ 2 cups cooked wild rice
