Let’s make a Greek pasta salad. I’m going to show you how to make mine that’s around 250 calories and 17 grams of protein per serving. I’m using a whole cucumber and this little guy. Got three sweet bell peppers, orange. Now, yellow and red. Look at all the colors in there. I love it. It’s looking beautiful. While I was chopping that up, I got this to boil and we’re going to add this. Now, we’ll move back to the veggies. We’re going to add tomatoes to the mix. For the tomatoes, I switched the chopper to a little bit of a bigger one. Cutting them in half. I am obsessed with tomatoes. So, I’m going to do a little over half of this little box. I’m not a huge onion lover, so I have this red onion and I’m just going to add about half of it into here. I like it. I’m just going to add a fourth of it. Swap it for the smaller size. Pour that into a bowl. Next, we are adding some chickpeas. I’m just going to strain this and then pour it straight in. Add those. We’re going to add some cheese. I’m using feta reduced fat. Going to pour the whole thing in. The pasta is also ready. So, I’m going to strain that. Add a good stir. Last but not least is the dressing. I’m using the Skinny Girl balsamic vinegrett. Pour like half of this in here. Little more than that. Fully mixed up. And she’s perfect. You make it just like that. It’s around six to eight servings. It’s absolutely delicious.
