
I saw this recipe in the Ball home canning cookbook, and I’d love to make it. I have two Trinidad scorpion peppers left from this summer that I’d like to add. Can I substitute the two by weight from the 350g of jalepeno in the recipe?

yes, peppers are interchangeable
All peppers are interchangeable by weight or volume (whatever the recipe says). So you can substitute any mix of peppers that you would like for this recipe, as long as you use 12 ounces of them. I find that pepper jellies tend to come out far less spicy than expected, so I always substitute hotter peppers than called for and use more hot peppers instead of any bell peppers in the recipe.

You can! I did this recipe this year with red Thai chilies and some sweet red pepper and it turned out beautifully.
