Very real, very normal. Thatβs what you call (Flakes) of the fish. Salmon also has them.
A lot of Flakes like that actually normally comes from the head end of the Loin too, so nice cut.

Yup that looks like keta salmon with the light color. You just got a piece toward the tail, which is the part fishermen prefer. If you are buying salmon from the fish counter at the supermarket, you want to scoop up all the tail pieces they have. They donβt have pinbones. People go for the thick part and then have to deal with the bones.

Salmon tail meat has no bones, less fat, and more connective tissue. Because of that itβs one of the best cuts for slow cooking methods like braising.
