1,000 grams of bread Flour
650 grams of warm filtered water
20 grams salt
200 grams active starter
(Makes two nice large loaves or 24 babies)

mix all the ingredients together, cover and mix all the ingredients together, cover and let rest for 60 min
do 3-4 sets of stretch and folds with 60 min of rest in between each one
split the dough is half, do the final shaping.
(This is where I weighed out my dough and divided into baby loafs)
I just placed onto floured parchment into a glass
9×13 basking dish, cover and put in the fridge for 12-24 hours

Baked in Dutch ovens, closed at 450 for 20 mins then lid off for another 15-20!

    So cute! I was trying to figure out how to make these a while ago and thought I would need tiny Dutch ovens. Very cool that you did it in a normal sized one! Did you cold proof them in small baskets or muffin tins or something?

    Honestly I feel like rolls are different than baby loaves because rolls are softer and don’t have a crust most of the time and these are literally just baby crusty loaves

    They are perfect! And would be divine as soup bowls, if interior is not too holey.

    I can’t believe it has never once occurred to me to do this. Completely solves the problem of being impatient for the bread to cool. And all the delicious crust in each serving as well as a soft interior.

    I wonder if the overnight proof could be done in a muffin tin lined with cloth?

  11. The German word for bread rolls is Brötchen, a diminutive of Brot (bread). So I’d say you just made sourdough loaflets 😁
