I have no regular chocolate/chocolate chips so I finely chopped half a block of an unsweetened bar, and a block of Ruby chocolate (was 50% off at my grocery store) and I think it’s the perfect balance of sweetness. And the dark chocolate and pink chocolate just make a nice contrast IMO.

Here is my super secret recipe:

Ok, fess up! How many of you were like me and clicked through bc you initially thought there were pieces of HAM in the cookies while scrolling past??

Ps. To the OP, now that I know (and am relieved) you used ruby chocolate, I adore the contrasting colors! 🤗

These *ARE* beautiful!! Thanks for including the recipe! I often find the chopped dark chocolate or unsweetened bars are the best way to balance cookies!

😭 I’m jealous you have access to ruby chocolate at your grocery store (AND on sale, no less!)

I thought it was peppermint pieces at first. They look delicious!

The contrast between the dark and the pink bits is gorgeous – I bet they taste even better than they look.
