Ingredients:

For Batter:
• 1 cup urad dal (split black gram, skinless)
• 2–3 tbsp rice flour (for crispness)
• 1/4 cup water (adjust as needed)
• A pinch of orange or yellow food color
• Ghee or oil (for frying)

For Sugar Syrup:
• 1½ cups sugar
• 1 cup water
• 3–4 cardamom pods (elaichi)
• Few saffron strands (optional)
• 1 tsp rose water or kewra essence (optional)

Quick Process:
1. Soak urad dal for 4–5 hours, then grind into a thick, fluffy batter (no lumps).
2. Add rice flour, color, and beat well for light texture.
3. Prepare one-string sugar syrup with sugar, water & cardamom.
4. Pour batter in piping bag or cloth with hole and shape imartis in medium-hot ghee.
5. Fry until crisp and golden, then dip in warm syrup for 2–3 mins.
