Ingredients (makes about 1 cup):
• ½ cup Greek yogurt (thick, plain)
• 3 tbsp tahini (sesame paste)
• 1½ tbsp lemon juice (freshly squeezed)
• 1 small garlic clove, finely grated or crushed
• 1 tbsp olive oil (optional, adds smooth texture)
• 2-3 tbsp cold water (to thin to dressing consistency
• Salt & freshly cracked black pepper to taste

Method:
1. In a bowl, whisk together tahini, lemon juice, and garlic — it will thicken slightly.
2. Add yogurt and whisk again until creamy and uniform.
3. Slowly whisk in olive oil and enough cold water to reach your desired consistency.
4. Season with salt and pepper.
