I made falafels and they were actually good! I kind of eyeballed it after watching some recipes but I did about
-4 cups of soaked (not cooked) chickpeas and threw in a bit (small handful) of fresh parsley, a quarter of a small onion, and around a tsp of salt and 1/2 tsp of garlic powder, paprika, turmeric, and cumin. And a little corn starch. I blended it in my vitamix slowly cause I don’t have a food processor and made sure it didn’t get too smooth and creamy. I then just scooped it with a spoon then shaped it with my hands and fried it in olive oil.
It was so yummy with my salad and hummus!

That sounds so good! I’ve made them a few times, but it’s not something I think to make often. Thanks for the reminder.
This sounds delicious and super easy! Thank you for sharing. And I love how excited you are, there’s nothing like cooking up something that turns out wonderfully 🙂 How long did you have to soak the chickpeas?
