You’re going to love this filling but light Greek lemony chicken salad. First, make the dressing. Whisk together extra-virgin Greek olive oil, a little bit of vinegar, lemon juice, and lemon zest, garlic, oregano, mustard, honey, salt and pepper, and red pepper flakes if you want. Get the veggies ready. Have the teardrop tomatoes. Slice the onion. Have and slice the cucumber. Slice a red bell pepper. Shred the romaine lettuce. Assemble everything decoratively on the plate. Have your kalamata olives ready, too. Hald or already pitted. Cut the avocado into slices. Peel it first, of course. Have your leftover roasted, poached, or grilled chicken breast ready and slice it up. Place those beautiful slices on top of the salad and drizzle. Then toss with a dressing. Enjoy.
