  2. Fill your baskets completely full every time and close the vents at the end of each cook. Knock the ashes off and use a Bernzomatic torch to light the leftover charcoals and then add fresh on top. Rinse, repeat. I usually have 3 ‘courses’ of briquettes in my baskets. The very bottom is 7/8”-1-1/8”, the next layer is 1-1/4”+, and then the fresh on top. Each cook session I need to add between 8-10 fresh briquettes per basket (16-20 total) unless I cooked something that takes longer an hour or so. I also have a second charcoal grate installed perpendicular to the first. I never have large chunks in the ash catcher.

    Get a 6” adapter hose to connect a torch head to a standard 20# propane tank. It takes 5-10 minutes to light the briquettes and then let them come up to temp. The propane tank will last well over a year before you need to refill.
