1 kg pumpkin (peeled, deseeded, diced)
1 medium onion (chopped)
2 garlic cloves (chopped)
2 tbsp olive oil or butter
500 ml vegetable stock (≈3 cups)
150 ml cream (≈2/3 cup, heavy or cooking cream)
¼ tsp ground nutmeg
Salt & pepper to taste

Heat olive oil or butter in a large pot. Add onion and garlic, sauté for 2–3 minutes until softened.
Add diced pumpkin and cook for about 5 minutes, stirring occasionally.
Pour in vegetable stock, bring to a boil, then simmer for 15–20 minutes until pumpkin is soft.
Blend until smooth and creamy (use a hand or blender pumpkin soup recipe style).
Stir in cream, nutmeg, salt, and pepper. Heat gently — don’t boil.

Hello friends, it’s autumn. We are getting closer
to Halloween and Thanksgiving and we’re going to prepare another seasonal dish today. Pumpkin soup.
My name is Vit Crystal and let’s get started. So, we’ll start with the ingredients. The
pumpkin itself built and deeded. We’ll have the heavy cream. Uh, and you can also
use the regular milk or vegetable milk. We’ll prepare the vegetable stock, regular one
with the parsley, leak, bay leaf, onion, carrot, and pepper, corn as well. We’ll have a few cloves
of garlic and onion as well to prepare the soup itself. Let’s get started. So, firstly, we’ll
have to prepare the stock. You can also prepare your stock before head. You can also have that
frozen. But anyway, we start boiling the stock and then we’ll start slicing our pumpkin itself.
So, let’s have around one liter of of hot water. Put our vegetables into the hot water and
around 40 minutes to prepare itself. So, while our vegetable stock is being prepared, we’ll
dice the pumpkin and and onion and the garlic. So, let’s start with the pumpkin. Really d you
know, small chops. to prepare it quite fast. I’m using the Hokkaido pumpkin, but you can
also use any way you know any kind of pumpkin you can buy in your grocery store or squash
or pumpkin as you like. The one is available. But against you know in in the autumn during
the season there are plenty of pumpkins around. One more important ingredient I haven’t
mentioned from the very beginning that’s a nutmeg will have a quarter of teaspoon
while our soup will be almost ready just to season it. You know that’s really perfect
combination the pumpkin and and the nutmark. Guys, we have diced the pumpkin and now
we’ll chop the onion and the garlic and we’ll start the preparation. We’ll have
around 1 kilo about 1 kilo of pumpkin. You you will find the detailed ingredients
quantity in the description below. Also, don’t forget to like the video. Chop
the onion on really small pieces. The same way the garlic We’ll start preparing them uh on a pot with the
olive oil or butter. We’ll use olive oil today. But again, you can use uh the butter, regular
vegetable oil, the one you use during your daily preparations. So, we have chopped the vegetables.
Let’s heat up the pot and start the preparation. Guys, our vegetables are chopped. So, we’ll start
preparing uh the base of the soup. We’ll put a little bit of olive oil uh around two uh spoons
and then our onion and our garlic will go next. When it’s hot, start with olive oil. Start with onion and then move to the garlic. Stir a little bit to mix the oil together with the
onion and let it few minutes a little bit to soft and garlic will go next. So when
the onion is nicely softened, we uh put the garlic. Next again stir and wait
a few minutes also the garlic may soften. The next we’ll go pumpkin. So both
garlic and the onion are quite soft. And uh we’ll put all of our pumpkin there
and leave for several minutes also to make it soft and quite soft. Yes. Uh
because so and next we’ll add start adding the stock. But firstly we need to
make sure that the pumpkin is quite soft. Now you mix it really good, really thoroughly.
And um we will close the pot and decrease the temperature to leave it for several
minutes to soften the the pumpkin. It will also release the juice and start
you know sautaying quite softly easily. Close it and leave it for several minutes. Our
pumpkin is already quite soft. Not completely, but much softer than it was from
the very beginning. Next step, what’s what we are going to do?
We’ve got already our stock ready. We’ll add around 750 uh milllers of uh of the
stock which going to make around uh three cups of the stock. So let’s measure that.
We’ll also have the carrots that I already prepared. For better taste, you
can also get this carrot out, slice, and add to to the soup. But it’s up to you.
If you like more, you know, uh, sweet taste, carrot will help to make it more sweet. 750.
Good. It is over here. And go to the pumpkin. Uh I will go a little bit you know with the leave
250. So half half of the liter two cups the rest we leave and we’ll see how liquid our soup is
going to be. If it’s going to be too uh you know too hard will get a little bit more. If no we’ll
leave it like that. Now mixed stir a little bit and close. Leave it. So also I as I was mentioning
we have carrot over here. We can take this out. Slice the carrot and also send to the soup. Now you leave it for around 20 minutes, at least
20 minutes. And you will see if it’s already there, ready or not. While the soup is almost
ready, we’ll prepare a few pieces of baguette to serve. We’ll serve that together. Fry the
baguette for a few minutes to make it crispy. It will taste together really good. I’ve got the
fresh baguette 1 hour ago in our nearest bakery. do it the same. Your wife will appreciate that. Let’s go with several sizes.
So to fry the baguettes, heat up a little bit the pan. Add
few drops of oil. The best olive oil. gets let them fry on the both sides. Few minutes
each side will be really good. So the baguette is ready in uh around 2 minutes. So the
soup is ready. I mean the pumpkin and uh it’s boiled. It’s prepared.
Then uh we’ll do the blendering. We can use the hand blender or you
can use the cup blender as well. Once blended, we add in the heavy cream. As
already mentioned from the very beginning, you can substitute that with the milk to
have it lower fat or with the vegetable milk. uh we are adding around I would say uh a
little bit more than half of the cup 150 fil mill ml also leave it a little bit uh for
the serving you know also you can check our other seasonal recipe we prepared recently here on
the link and um also let’s season with the pepper and the salt. One teaspoon and a half. And the nutmeg.
Really good combination for this kind of dish. Pumpkin and nutmeg makes really
good taste. A quarter of teaspoon. We will mix once again. Once mixed, heat it up once again. Not really 100°
uh but to make it hot before you will serve. Also, you can try if you have enough salt, enough
pepper and add if you would like to get more. The soup is ready and we are going to
serve. You see how nice and creamy it is. I’ll give you a few tips to to uh to serve it. Really nice. Perfect. I believe the taste is
