I make my own alkaline noodles, every two weeks. I made a chicken broth in the instant pot and hacked the broth to resemble tonkatsu with tahini in my tare which worked on taste and color . Added my own chili garlic sauce. We only have one ramen restaraunt in my small Canadian island community and it's expensive so I'm figuring it out on my own !
