Decided to play around with some flavours and added some broccoli, baby zucchini, kimchi, spring onion, konjac rice, veg stock and soy sauce into a pan with a few seasonings and let it simmer. It’s going down a treat.

I mean yea it’s just vegetables and zero calorie rice

My suggestion is always to add protein to dishes like this. When we’re cutting to 1200 calories we can easily miss out on protein.

My go to is scrambling an egg or two and adding that in.

Some tofu or tempeh in that would be sooo good!

i would substitute the zero calorie rice for something more gut friendly and still low calorie, like bean sprouts. an entire package, which makes a huge bowl, is only 60 calories. i typically boil them 5 or so minutes, then mix them with japanese barbecue sauce, and it’s delicious. if you add in extra vegetables, it’d be even more quantity of food and still low calorie.
