I never cooked a tomahawk I cook ribeye and sirloin every week and I got down to a science but I never cooked something so big and I don't have something to take the internal temp. I need advice help I don't want to mess it up 😭

    You need to reverse sear it.

    Heavy kosher salt the night before on a rack in the fridge (dry brine).

    If you have a smoker, use it at 200 degrees. If you don’t, use your oven at lowest temp or 200 degrees.

    Get it to 90 degrees, sear on the hottest thing you own: cast iron and avocado oil, blackstone, or your grill as hot and as close to heat as you can get it. Searing will bring it to your desired temp but you must check it.

    I like rare but I do my tomahawks medium rare dead center. Whole family should have a chunk that fits their preference.

    I fucking love tomahawks. But they are annoying as hell to cook in a pan because that fucking bone Will lie against the edge of the pan, preventing a portion of the meat surface from being entirely flat against the pan. That’s the reason why I rarely buy them these days. But they are the greatest if you are grilling/smoking

  6. Reverse sear. Smoker until 120, then finish in a hot pan, but not so hot the butter burns to build a crust. Then rest, should be 134 at that point. If you don’t have a smoker, you can do it in an oven.

    But seriously I’d probably reverse sear or sous vide then sear if you have one. Given no thermometer, you could give ChatGPT all the info and ask how long to do both steps. It’s telling me 225 oven temp for about 90min then 60 seconds per side on your sear.

  8. get a thermometer and cook it like you would any other ribeye. reverse seer would be best.
