    I have a question. Why are the tomatoes just sitting there, uncooked or prepared in some way. Everything else looks amazing. The plating of the tomatoes throws me off. Scoop some beans onto the plate, grab a few pieces of fall off the bone meat. Then pick up this six pack of beer style of tomatoes and rip one off and add it to the plate. Like a hand-fruit of sorts.

  8. You should TOTALLY make a stock with that bone. Makes a killer Ramen broth. Char some onions. Garlic and ginger. Add mirepoix to the water and cook low and slow for 6 ish hours. Strain all the stuff out and reduce the stock by 2/3rds (simmer on low). Then you can freeze it in batches. To reconstitute, just throw a little bit of water back in and you’ll have delicious and Smokey stock!!! I do this with all of my Sous vide, leftover liquids.
