They should ripen relatively well inside. You can pick them and put them on the kitchen counter, or cut the vine and hang the whole thing somewhere inside.

    Green tomato hot sauce
Grilled green tomatoes with parm or feta
    Green tomato pie
    Fried green tomatoes

They will take longer to ripen, sometimes they will last all the way to January

If you have enough, my forever go-to for green tomatoes is green salsa.

Didn’t mean to write quick lol. Also this is Nebraska for context so I picked them already as it may freeze tomorrow

Im with you. We’re about to have a hard frost in a day so I’ve been pulling all mine in. Gonna let them ripen on their own.

For volunteer tomatoes I always recommend saving the seeds! Those are plants worth growing again!

Fried green tomatoes are a traditional Southern dish that is great.

Chow chow, or fried green tomatoes are my go to’s for green tomatoes.

Green tomato chutney—on bread or crackers with some very sharp cheddar cheese.

Last week I foraged 8 lb of green tomatoes from a volunteer plant I came across on my walks. Turned them into Green Tomato Salsa Verde and put it up for winter. Hoping it turns out delicious, but I plan on letting it rest for a few months before trying. They are a great substitute for squash in a vegetable soup. Or fried green tomatoes.
