Found these in a pack at my local farmers market for $12/lb and got them out of curiosity but have no idea what’s causing half of it to be super marbled while the other has barely any at all

    Push on it. If it’s soft, it’s gonna be some good eats. If it’s hard, it’s steatosis.

    Which basically means the cattle in question had an injury in that spot. It’s still fat, but it will be hard and not tender.

    My first thought is that somebody used meat glue to stick two smaller pieces together. Transglutaminase, the chemical name for the meat glue, is a very common practice in both the US and EU. It really looks like somebody stuck two bits together along that seam line just outside of the marbled area.
