Saute them until they’re translucent and salt as you go. Once they are cooked through about 5 minutes, add some freshly minced garlic. Saute for another 2 minutes. And then we’re going to go in with the arborio risoto rice. Toast that for about a minute. And then we’re going to delaze with white wine. Make sure it’s like a dry white wine like Sabanil Blanc. And from here, we’re just going to stir literally like the whole time. That creates the creaminess. It activates the starches. Once the rice starts to get dry, add hot chicken stock and then keep going. Only add about a half cup at a time and then we stir. And then keep doing that process until it’s about al dente. Meanwhile, saute mushrooms, garlic, shallots. Once rice is cooked and has a slight al dente, we’re going to add some whole butter, the mushrooms, and stir that in. If you have no wine, you can use just chicken stock for the whole thing. It will taste slightly different, so be mindful to adjust your seasonings accordingly.
