My mom has given me a bunch of apples from her tree, and I want to can them. My favorite way to eat an apple is to cook it until it’s soft with cinnamon (peels on, no sugar). I cannot find a recipe to can this- they all call for sugar, peeled apples, and a thickener. Is this cause it’s unsafe to can the way I want or just a preference ?

    You can do applesauce unsweetened. Still have to peel, though.

  3. I run the cooked apple pulp through a chinois strainer and that gets rid of all the peels and cores. I don’t know of any approved applesauce recipes (for canning) that call for thickeners. Sugar is optional in this case and often is not necessary if the apples are sweet.
