How to make zucotto cake. Prepare a subayan. In a bowl, whisk the egg yolks, marsala wine, fresh cream, and sugar over a bayarie until thickened and airy. Let the subbayan cool down completely. Fold in the whipped cream, chocolate chips, and nougat chips. Gently bloom and melt the gelatin. Then mix it into the subbayan mixture to set. Line a bowl with sponge cake or lady fingers. Fill with the cream mixture and chill until firm and mold and dust cocoa powder. Cut and serve in cold.
