First time not wrapping pork butt during the stall. Took about 13 hours to get to 205 internal on this 7 pounder. I let it rest for 2 hours in aluminum after being pulled out.

    What temperature did you cook it at? I never wrap mine and they seem to take 16-18 hours no matter what size at 250 on my current grill. Always took right at 18 hours on my last at 225.

    I have found that on my pellet grill I can go as high as 275° no wrap and it doesn’t impact the pulled pork quality at all.

    Doing this dramatically cuts the cooking time though

  4. I like to wrap after getting a good bark if I’m doing pulled pork because it doesn’t get the dried out edges. I usually smoke overnight for about 12 hours at 190, then wrap in the oven until done. If I’m slicing it up, unwrapped is nice.

    Quick butt around 10 hr 225-250 no wrap. Want super tender? Lower temp with wrap

    i prefer to wrap and cook them in 5-8hrs. i used to think longer is better when i was a noob.
