Roasted red pepper, red chicory, mozzarella and salad with olive oil and balsamic 🫑🍇🥬
This is a lovely salad as it combines crunchy, bitter chicory and sweet, soft roasted red peppers. We’ve kept the dressing simple with just olive oil and balsamic vinegar to let the flavour profiles of the ingredients shine through. ✨

Ingredients:
1/2 jar Karyatis roasted red peppers, very roughly sliced
1 head red chicory
1 ball mozzarella
Karyatis Extra Virgin Olive oil
@odysea_ltd Balsamic vinegar (pomegranate / date molasses would also work well)
Handful finely chopped chives
Instructions:
Wash the chicory, remove the leaves and arrange on a plate. Tear over the drained
mozzarella. Arrange the roasted red pepper slices on top. Drizzle over plenty of olive oil
and balsamic vinegar and finish with flaky sea salt and chives.
