    Rest in fridge with paper overnight then Vac pack and let it equalise for 2 weeks, minimum.

    I would have cut them up into smaller chunks before smoking so they got more smoke per square inch

    What time/temp did you smoke it at? Looking to get into smoking cheese for the holidays.

  4. I wish I had the patience for smoking cheeses. But the 2 week to 2 month wait between smoking it and being able to actually enjoy it is a bit much.

    Would’ve been better if you smoked twenty 4 ounce pieces. But it still looks beautiful. What cheese company? I use Tillamook Sharp.

    I usually smoke cheese at the beginning of November. I’ll do Cheddar, mozz, and whatever else I’m feeling fancy about. Cut them into smaller blocks for better smoke penetration. Wrap in paper for 24 hours then vac pack and let it rest for a month and a half until Christmas. It’s always a hit and makes great gifts.

  13. I smoke my hard cheeses in half pound blocks. Also, um, have you not had fresh off the grill smoked cheese? Its unbelievable!🥴
