I wish I had the patience for smoking cheeses. But the 2 week to 2 month wait between smoking it and being able to actually enjoy it is a bit much.

I usually smoke cheese at the beginning of November. I’ll do Cheddar, mozz, and whatever else I’m feeling fancy about. Cut them into smaller blocks for better smoke penetration. Wrap in paper for 24 hours then vac pack and let it rest for a month and a half until Christmas. It’s always a hit and makes great gifts.
