Friend gave me some yellow fin tuna but not sure what to cook? Should I take the skin off?

    That’s the toro. Premium cut. I would skin it pat down with paper towel and then slice it and eat it raw. You can also marinade in what ever you want and then grill on the bbq. It will be very moist and almost gelatinous like. I’m jealous.

    I’d marinate it with lime juice, soy sauce, serranos, and pickled purple onions. That’s how the cook does it when he makes it for us at work. Little spicy savory sashimi. It’s sooo fucking good

    I would sear, slice it and serve with wild rice, pea shoots and a soy based dip.

    Not toro. Toro is from bluefin tuna not yellowfin ,yellowfin has a much leaner belly cut.id recommend smoking the belly and searing or grilling the bottom loin.

    Salt, pepper and lemon. 🍋 maaaaaybe a hint of fresh ground rosemary. But probably not. Make Sammy’s with the left overs.

    For bellies I either dry age them a little in the fridge for sashimi or marinate them in sweet chili oil and grill em over charcoal.
