
Thankfully it’s broth and I can start it over without losing quality, but the worst part about living rurally is that every single time it storms my power goes out. I knew I want tempting fate when I started the canner while it was raining.

Oh bother! I live rurally as well and worry with our federal (USA) government in shambles that this will become the norm. I’m considering figuring out a propane system for this reason.
At first I was like, can in the dark! I canned corn jelly in a power outage late into the night this past april but… I have a gas stove. At least it’s stock and not an actual veg or meat!
Rural canning rule of thumb: always check the weather if you’re about to can, and have your camping stove staged if shit should hit the fan. Hope you’re back running quick, OP. I’ve been there and will be there again soon. Fingers crossed!

The good news is that stock is easy to reprocess. But yeah it sucks when the power goes out at the wrong time.
We live rural and we’ve planned generator pannel and stuff when building the house in 2018, but I have no mean to keep canning in the winter.
