
Just pulled up my first Jerusalem Artichoke plant. Stunned by the number of tubers it’s produced. Got 2.5kg off 1 plant! I need to store them as I’ll not get through that much in less than a couple weeks.
For those experienced with sunchokes, How do I keep them? Do I treat them like potatoes? Do I clean them?

I no longer grow them today, but when I did a few years ago, I would not wash them after the harvest. I would brush off some of the dirt with a garden glove and just loosely wrap the root cluster in crumpled newspaper. Put it someplace dark, preferably with pretty good air flow so that it doesn’t rot. I never tried keeping them longer than a couple weeks, so I don’t know if there is a different method for longer storage. Once you get ready to eat them, scrub them with a vegetable brush under running water to remove the grit. Don’t need to peel them.
Do these grow differently than regular artichokes?
