I made Tteok-bokki and Braised tofu both with enoki mushrooms. Made the Tteok-bokki with kimchi in the sauce and man oh man was it ever a delish meal. I finally made my own kimchi so I could make these dishes 😋 ☺️
Never tried this but the texture alone looks so appealing to me.

Honestly, as a Korean, this is neither dubu muchim nor tteokbokki. The sauce for dubu muchim doesn’t look like that — it actually resembles Chinese food. It’s far too oily and the ingredients appear incorrect. Tteokbokki never contains minced meat(maybe 차돌), nor does it include paengi; the color also looks off. Moreover, dubu muchim traditionally contains no meat, so labeling it as “vegan” is meaningless. Tteokbokki likewise has no meat unless eomuk is added; apart from a few households that use anchovy broth (which can be perfectly substituted with dasima), there is no meat in it. This is not Korean food.

That looks delicious, the color alone is making me hungry. Enoki mushrooms with kimchi sauce is such a solid combo, gives the perfect texture and spice kick. You really nailed that home cooked Korean vibe
