You probably know bigger how big it is, huh? Oh, yeah. But you know what? It’s growing like crazy. Yeah, it does. Oh, yeah. Yeah. I’m Dennis Bragg, president of the Osprey Nakomas Chamber and Osprey or ONCC Foundation. Thank you for coming. Well, thank you, Chef Ralph. Boy, you doing well up here, I see. And drive by here on a weekend and there’s cars everywhere. Yes, we drive. That’s a challenge in paradise. Exactly. Around here anyways. Anyway, you want to know a little bit about our chamber? Yeah, go ahead. Okay. Yeah, we’re we’re situated um Osprey Ncomomas, but we have uh people join our chamber from all over the state, really other states as well, simply because we’ve created a model to support the community. Yeah. Uh we’re all volunteers. We have no buildings to pay for. So, we funneled a lot of money back to the community through our nonprofit organizations that are members. And last year for health, hunger, and housing and other nonprofits, we donated over $32,000 back to the community. That’s great. That’s really great. The main focus, like I say, is health, hunger, and affordable housing. Yeah. So, there’s a lot unfolding this year. So, I just advise people to keep tabs and see what we’re doing. Okay. Thank you for doing all that all you volunteers. We really appreciate it in Okay. What we doing today? We’re doing it’s a famous dish out there more in Europe when the summer time called vitello toato. Vitello is a wheel where you actually roasting in the oven and then you slice it very thin. Uh wheel is not that popular over here. You see more turkey and that’s what I did called the tino tomato. It’s a roasted turkey where I sliced it in and put them on a plate. And the interesting thing, I did this couple months ago. People asking really put the tuna sauce on top turkey. Yes, we do. We do. Okay, I show you how that go. I just took regular tuna. You can buy them. Every store hasn’t. It’s a little canned tuna. And what I did, I chopped them up really thin. And what I did add here is a little bit of mayonnaise and create a little bit of sauce. Just like that. on. What I adding here is a little lemon juice on the little salt and pepper. I need a little bit more mayonnaise here. And here you have it. Very simple recipe. Most of the time, sometimes simple is the best on what we’re doing. You put that right on top here and spread that right on here. Just like that. on the when you’re thinking that’s weird. No, it’s not. It’s actually very very good. And we put the little capers right on top and a little bit onion rings. Okay, before I finish that, we go quick to the break. Couple tomatoes on a little little lemon poppy seed dressing salad. Garnish that like this. And we put a little lemon on it. Okay. On the I’m proud to say Lindsay is here from the Dao family. Thank you very much for coming. You’re welcome. Thank you for having me. Uh tell us two minutes what’s the Dao family? So the Dao family is known for back in Lebanon there was a war and the sons were brutally injured when the bombings went off and their parents smuggled them out to France. So kind of goes in with the French thing and they were able to then go to California. They went to the University of California and then sold their IT company and were then able to buy Dowo Mountain and create a wine. So they’ve had two very three very crazy lives over the years. Oh wow. So tell more about the story as well. Yes. on what I want to say. We’re doing actually a little dao dinner on the 11th of September. Uh when you actually present five family wines and that will cook a little food with it. We will tell you a little bit more over the next couple of weeks how that will work. You say you brought the Chardonnay. I did. I think paired with your food today, the Chardonnet will go really well. It’s light, it’s crisp, and it’ll let your dish stand out. So we can have that for everyone to enjoy. Yeah. When they come here and order this delicious meal. Yes. Perfect.
