🍗 Keto Chicken Cacciatore (Makes 2 servings)

Ingredients :
170g Chicken breast
1 tbsp Extra virgin olive oil
Black pepper, salt and chili powder
1 cup Red onion
2 cups (192g) Mushrooms, sliced
1 medium (119g) Red bell pepper sliced
2 tsp (3g) Dried mixed herbs
411g Crushed tomatoes
½ cup Low-sodium chicken stock
12 Green or black olives, chopped (32g)
Fresh green onion, chopped
🔪 Method:
Sear the Chicken:
Heat olive oil in a large skillet over medium heat.
Season the chicken breast with black pepper.
Add the red onion and cook for 2–3 minutes until softened.
Add red bell pepper and mushroom . Cover the pan and cook on low heat until mushrooms are tender, about 5–7 minutes.
Add Flavor:
Stir in the dried mixed herbs.
Add crushed tomatoes, chicken stock
Stir in the chopped green/black olives.
Simmer:
Cover and simmer on low for about 15–20 minutes, or until chicken is fully cooked and sauce has thickened.
Finish & Serve:
Check seasoning and adjust pepper (and salt if needed).
Garnish with chopped fresh green onion
