Looking for ways to use extra tomatoes from the garden and came across this recipe. Not sure if it’s Mediterranean but it was delicious.

    I had extra zucchini and tomatoes from the garden. So caponato with zucchini instead of eggplant.

    5 cups chopped zucchini
    4 cups of diced tomatoes
    2 cups of bell peppers
    Teaspoon of celery seed (I was out of celery)
    Four cloves of garlic
    Half a jar of capers
    Half a cup of green olives

    Fried the zucchini in olive oil, remove from skillet then add remaining ingredients until done then added the zucchini back. Can be served hot or cold.
