Final harvest of the year, not sure what to do with so many unripe
Finally decided to harvest the rest of the crop, temps are starting to get way to low at night. Got a lot of unripe ones.. any suggestions on what to do with them?

I had a huge bag of 7-Pot Primos that didn’t quite finish off. I was in the same dilemma as you, but today I noticed they were starting to get soft, so they’re now in the dehydrator. I’ve never dried green peppers before. The green Primos are surprisingly good … not quite as sweet as ripe Primos (ripe ones are REALLY tasty, in addition to being the hottest chilli I’ve tried), but they are equally spicy. I’m interested to see if/how drying them affects the flavor. They won’t go to waste, that’s for sure. Hm … maybe I can make a powder with some dehydrated tropical fruit. (?) That might be really good.

Hot Pepper Sauce. Leave the green ones on the counter for a few days. They should start to change color which increases the heat. The trick with hot peppers 🌶️ is patience.

I’m currently lacto fermenting all of my green peppers
Once they’re done I plan to smoke them and make rubs
