Been visiting my mom in the ICU for nearly two weeks now and I have been eating a lot of food from the hospital cafeteria. It's a pretty good cafeteria, but I decided to actually do something for myself tonight.

Heated in a 225F oven until it reached an internal temp of 130F. Let it rest while I cooked up the veggies, then separated it from the bone, slathered it in beef tallow, and seared it in blazing hot cast iron.

No ragrets.

    I have always said I can’t do a tomahawk because I have nothing big enough to sear it on. I never even considered cutting it off the bone and then searing it. I can’t believe I didn’t think of that.

    Next time, assuming you didn’t, use the drippings from the reverse sear (assuming there’s enough) to cook into your veggies. Or you can use the pan you seared the steak in and just let the steak rest longer. Regardless those beef juices that come out through the cooking process add a ton of flavor
