Welcome back to my series, All About the Fiber, where I’m trying to get us to eat more fiber while keeping it fun and exciting. For episode 3, we are going to be making Turkish peeloff. I was obsessed with this on my trip to Istanbul. The flavor kind of reminds me of Spanish rice, but it’s crazy because it looks and tastes like rice, but it’s not. Start by sautéing your garlic in butter and oil. Then cook down your tomato paste along with your diced bell pepper, grated onion, and grated tomato. And now for the fiberpacked ingredient, bular. It’s a type of wheat. We’re going to specifically use the kind for peel off. Then we’re going to add in our broth, some salt, paprika, cover and let it cook, steam for the last 10 minutes. Then remove the lid and fluff with a fork. There’s a recipe coming up for the Adina kebab that you can serve this with. So stay tuned and enjoy.

  1. Bulgur pilavi is amazing. I like the version with eggplant where towards the end of cooking you add fried eggplant pieces. Dream!

  2. Fun fact: sometimes finding bulgur can be difficult depending where you live and/or can be expensive. You can substitute for barley ✌🏼❤️

  5. Fiber intake is enhanced with intake of prebiotics and probiotics, water, polyphenols and even healthy fats! A meal with fiber alone is good but it’s even better when you add items like yogurt, fruit cup etc. we use bulgur regularly and this is a great recipe. Thanks for sharing!
