
They are already a little soft. I cut one open to make sure they’re still good, though. Is there some kind of purse I could make with lime juice or something that could last a couple months in the fridge? Open to any ideas though really.

I freeze mine since I use them sparingly. Then dice/blend with whatever you’re cooking them with when you need a lil extra heat

Slice and toss into a jar of leftover pickle juice. I keep deseeded and sliced strips of reapers, scorpions, etc. in leftover pickle juice pretty much year round. Super easy to just pull some out with a fork and toss on a pizza before it goes in the oven.
I made hot sauce with most and dehydrated the rest for future use
If it were me, I’d make some fermented hot sauce, but you can also make a vinegar based sauce that will keep for a very long time.
Chop the peppers(wear gloves). Mince some garlic and onions. Put them all together in a mason jar, cover with white vinegar. Put them in the fridge.
Freeze them, dry them, make hot sauce!

Make sauce or dry them out and then grind them and use it as pepper flakes on pizza or whatever you want.

Hot sauce
When I have extras like I do right now I vacuum seal them with 3% of their weight in salt. Leave at room temp. They’ll ferment and are shelf stable. I’ve forgotten about bags for a year or so without issue. Or just dehydrate or freeze. Also ghost pepper salt is craaaazy good. I have a recipe if you want. I sell it at events and it goes like hot cakes.

Pico de gallo
Fermented chili sauce. It’s super easy to do.
Make El Chapo!
🔥 El Chapo
10 Jalapeños
2 dried arbol peppers
5 garlic cloves
1 Onion
1/2 Tsp Salt
Boil for 5 mins and strain
1 lime squeezed
Cilantro to taste
Blend for two minutes
3/8 cup avocado oil
Add avocado oil blend until creamy about two mins
Ferment them.
This recipe is awesome – the carrot doesn’t necessarily calm the heat, but it brings out the sweetness of the chillies more than a straight vinegar sauce.

Dry them out, turn them into pepper powder.
Freeze them and use them at your own leisure. I wouldn’t make anything with them that needs to be around long.
Freeze, and cut only what you need to use in that instance.

I make sauces with as much fresh pepper as I can, then I vacuum seal and freeze my extra peppers, as peppers that have been frozen actually dehydrate more completely than fresh peppers, so I can make insane spice powders over the next couple years 👍

Finely dice them and disperse them in a ton of melted butter, mix and let it harden. Now you have ghost pepper butter.
