4.5 cups milk
1.5 cup water
3/4 cup sugar
1 cup jasmine rice
1/4 tsp kosher salt
2 eggs
1.5 tsp vanilla
1 tsp ground cinnamon
2 tbsp butter
2/3 cup raisins
Hey, let’s make rice pudding because it’s such a classic. You’re going to use a heavy bottom pot. Then you’re going to add milk. And this can be any mixture of milk, half and half, heavy cream. Even non-dairy milks might work. Water, rice, sugar, and a pinch of kosher salt. If you haven’t noticed, I need to make a large batch, but I’ll list all the quantities for one times the recipe down below. Then, we’re going to put this over a low to medium burner and bring this to a simmer. While our rice comes to a simmer back there, we’re going to crack 10 eggs. Oh, and you just want to make sure to stir that every once in a while, cracking eggs with one hand, smack it on a flat surface, pinch, and you’re going to separate. Then you’re going to add vanilla, cinnamon, and we’ll just set this aside. Once you reach a pretty rapid simmer like this, you’re going to turn the heat down just to maintain a gentle simmer. Then simmer your rice until it’s fully cooked. This can take 20, 30, even 40 minutes. It depends on how much rice you’re making, your stove. Just make sure it’s fully cooked. And I even like the rice a touch overcooked. But now it’s time to add our eggs. But if we just dump these eggs in here, we’re gonna have scrambled cinnamon eggs. So by adding a small amount of our hot rice mixture to our egg, it will slowly rise the temperature of our eggs, preventing them from scrambling when we add them back to our pot. Stir this and bring this to a simmer, but only let it cook for about 60 seconds. And as soon as you start to see small bubbles forming on the surface, you’re going to cut the heat. Then, as this cools, these are both optional, but you’re going to mix in some cold butter and some raisins. When I was a kid, there was a deli right next door to the hair salon that my mother worked at. And every once in a while on Saturdays, when my brother and I would go to work with her, if I was extra good, I got to get a cup of rice pudding. Cooking for the elderly brings many good memories for me. They lived my rice pudding. No raisins. That creamy consistency is all they wanted to eat without chewing much.

No to the raisins. Sub mango. Fresh or even those bagged frozen diced mango works just fine (thaw/warm it separately before adding it to your pudding).

I like to boil the rice in the water first to lessen the time. Also my grandma used to put the nutmeg and some sugar on top and then in the oven for 30 mins to get a nice skin on top with loads of flavour.
Never had raisins… almond slices though!

I never add eggs to rice pudding. Of course, the Indian rice pudding (Kheer) is so excellent.
But I do put raisins in so does that mean I shouldn't follow you 🤔

Crack single egg into small bowl dump in multi egg bowl. That way you only have to dig shell (wet finger) out of one egg if there's a mistake.
