First things first, you must buy this vegan birroa seasoning off of Amazon – https://a.co/d/cY0oNgk

From there, you’ll need to make your own seitan, which is SURPRISINGLY EASY????!?! here is the recipe I followed; https://itdoesnttastelikechicken.com/vegan-seitan-steak/ – don’t do the marinade attached. Instead, take your steamed seitan and add enough water and 1 tbsp of the birria seasoning packet and marinate overnight.

Then, follow the instructions on the birria seasoning and add a can of diced tomatoes and some oil to make up for the obvious lack of animal fat (gross). If it tastes bland, I add more chili, onion, cumin, salt, and garlic powder. Play with it and find what you like.

Put the seasoning and water intoa pot and being to a boil, then simmer, then keep nice and warm to dip your yellow corn tortillas in.

Then, the secret to a good birria taco, cook them on a nonstick, folded, on med low.. TRUST THE PROCESS. Do not flip until they are nice and crunchy.

Too with cilantro, white onion, and dip in the remaining birria sauce!

If you’re wild, you can also make some vegan cotija, but if you’ve been cheese free long enough.. you’ll find you don’t even need it 😉 here’s a good recipe if you’re not there yet tho!
